When you cook with olive oil does some of the fat get cooked off? If so is there a way to figure out how much?

I'm making a pizza and I want to know how much fat is in it..A tbsp of olive oil has 14g of fat, but I'm wondering if when it's cooked that number goes down...is this true? thanksWhen you cook with olive oil does some of the fat get cooked off? If so is there a way to figure out how much?
The fat in olive oil is HDL or High density lipoprotiens which are ';heart healthy';. HDL is the good fat that cleans out your pipes. Generally it's very good for you and I wouldn't worry at all about it. The ones you want to lookout for are ';Trans fats'; and LDL (low density lipoproteins). These are commonly found in animal fat, butter, shortening etc. A rule of thumb we use as chefs is ';if it's liquid at room temp then it will be liquid in the body. If it's solid or semisolid at room temp the it will harden inside the body.'; Some people even drink a little olive oil each day to help with their arteries. It doesn't really matter when you cook with olive oil. You body doesn't digest the fat in olive oil for some reason. So basically, it just slides right out. That's why when people diet, they are recommended to use Olive or Cannola Oils. Our bodies don't absorb them!
